  • 4 cups russet potatoes, peeled and diced
  • 6 slices thick-cut bacon
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 2 green onions, chopped
  • Salt & pepper to taste

Instructions

  2. Sauté the chopped onion in the drippings until translucent; add garlic and cook until fragrant.

  4. For a creamier texture, blend half of the soup using an immersion blender.
  5. Stir in heavy cream off the heat; serve topped with crumbled bacon, cheese, and green onions.
