- 1 whole chicken (4–5 pounds)
- 2 fresh lemons (juiced and zested)
- 3 tablespoons fresh rosemary (chopped)
- 3 tablespoons fresh thyme (chopped)
- 6 garlic cloves (smashed)
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C) and prepare a roasting pan with nonstick spray.
- In a bowl, mix olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, salt, and pepper.
- Place the chicken in a resealable bag or dish; pour half of the marinade over it. Seal and marinate in the fridge for at least one hour (up to overnight).
- Remove the chicken from the marinade; place breast-side up in the pan. Squeeze fresh lemon juice on top and sprinkle with more salt and pepper.
- Roast in the oven for about 75 minutes or until juices run clear and internal temperature reaches 165°F (74°C). Baste halfway through for juiciness.
- Allow to rest for 10–15 minutes before carving and serving.
