  • 1 whole chicken (45 pounds)
  • 2 fresh lemons (juiced and zested)
  • 3 tablespoons fresh rosemary (chopped)
  • 3 tablespoons fresh thyme (chopped)
  • 6 garlic cloves (smashed)
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C) and prepare a roasting pan with nonstick spray.
  2. In a bowl, mix olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, salt, and pepper.
  3. Place the chicken in a resealable bag or dish; pour half of the marinade over it. Seal and marinate in the fridge for at least one hour (up to overnight).
  4. Remove the chicken from the marinade; place breast-side up in the pan. Squeeze fresh lemon juice on top and sprinkle with more salt and pepper.
  5. Roast in the oven for about 75 minutes or until juices run clear and internal temperature reaches 165°F (74°C). Baste halfway through for juiciness.
  6. Allow to rest for 10–15 minutes before carving and serving.
