Ingredients
- 3–4 boneless skinless halal chicken breasts (about 1 lb)
- 2 tbsp olive oil
- 8 oz sturdy tortilla chips
- 2 cups shredded sharp cheddar cheese
- ½ cup sour cream
- 1 jalapeño, sliced
- 1 cup diced tomatoes
- ¼ cup sliced green onions
Instructions
- Preheat oven to 400°F (200°C). Chop chicken into bite-sized pieces.
- In a skillet over medium heat, add olive oil. Cook chicken with salt and pepper until golden brown (6-8 minutes).
- Spread half of the tortilla chips in a baking dish. Layer with half of the cheese and half of the chicken; repeat layers.
