Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh parsley or cilantro, chopped

Instructions

  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, paprika, cayenne pepper, salt, and black pepper. Toss in the shrimp until well coated and let marinate for 15-30 minutes.
  2. Preheat your grill to medium-high heat (about 400°F). Lightly oil the grill grates.
  3. If using wooden skewers, soak them in water for 30 minutes. Thread marinated shrimp onto skewers (3-4 per skewer).
  4. Grill skewers for about 2-3 minutes on each side until shrimp turn pink and opaque with grill marks.
  5. Remove from the grill and sprinkle with fresh herbs before serving warm.
