  • 1 lb fresh or frozen shrimp (deveined)
  • 1 ripe avocado (diced)
  • 1 cup sweet corn (fresh or canned)
  • 2 tbsp freshly squeezed lime juice
  • 3 cloves garlic (minced)
  • ¼ cup fresh cilantro (chopped)
  • 1 tsp chili powder
  • 2 tbsp olive oil
  • ½ cup sour cream or Greek yogurt
  • Salt to taste

Instructions

  1. Rinse and pat dry the shrimp. In a bowl, combine olive oil, chili powder, minced garlic, lime juice, and salt. Toss shrimp in the marinade and let sit for 15 minutes.
  2. Preheat grill to medium-high heat. Thread marinated shrimp onto skewers; grill for 2-3 minutes per side until pink and opaque.
  3. While grilling, mix diced avocado, corn, cilantro, lime juice, and salt in a separate bowl to make the salsa.
  4. For the creamy sauce, combine sour cream or Greek yogurt with lime juice and a pinch of salt in another bowl until smooth.
  5. Assemble your bowl: Start with grilled shrimp, top with corn salsa, drizzle with creamy sauce, and serve with extra lime wedges.
