  • 1 cup pepper jack cheese, sliced

  • Salt and pepper, to taste

Instructions

  1. In a bowl, mix salsa verde, olive oil, lime juice, salt, and pepper. Add chicken breasts and let marinate for at least 30 minutes.
  2. Heat grill to medium-high (375°F/190°C).
  3. Place marinated chicken on grill grates and cook for 6-7 minutes on each side until internal temperature reaches 165°F (74°C) and golden brown.
  4. Top each chicken breast with slices of pepper jack cheese one minute before removing from the grill; close lid to melt.
  5. Remove from heat, garnish with fresh cilantro, and serve immediately.
