  • 2 medium eggplants (about 1.5 lbs)
  • 2 cups marinara sauce
  • 1 lb fresh mozzarella cheese, sliced
  • 1 cup grated parmesan cheese
  • 1 cup fresh basil leaves
  • 3 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp balsamic vinegar (optional)

Instructions

  1. Slice the eggplants into ½-inch rounds and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
  2. Preheat the grill to medium-high heat. Brush eggplant slices with olive oil and grill for 4-5 minutes on each side until golden brown.
  3. In a baking dish, layer marinara sauce, grilled eggplant, mozzarella, basil leaves, and parmesan cheese. Repeat layers until ingredients are used up.
  4. Preheat the oven to 375°F (190°C). Cover the baking dish with foil and bake for 25 minutes. Remove foil and bake until bubbly.
  5. Allow cooling for 5-10 minutes before serving; garnish with additional basil.
