  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups fresh pineapple, cubed
  • 1 cup bell peppers (red and yellow), chopped
  • 1 medium red onion, chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • 2 tbsp fresh lime juice
  • 1 tsp garlic powder
  • Salt & pepper to taste

  5. Preheat grill to medium-high heat (375°F). Lightly oil grates.
  6. Grill skewers for about 10-12 minutes, turning occasionally until chicken is cooked through (internal temp of 165°F).
