  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 lb baby potatoes, halved
  • 4 cloves fresh garlic, minced
  • 1 cup freshly grated parmesan cheese
  • 3 tbsp olive oil
  • 2 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a baking dish with nonstick spray.
  2. Season the chicken breasts with salt, pepper, oregano, and paprika.
  3. In a bowl, mix minced garlic with olive oil and half of the parmesan cheese. Rub this mixture over the chicken.
  4. Toss halved potatoes in a bowl with olive oil, remaining parmesan, salt, and pepper until well-coated.
  5. Arrange seasoned chicken in the center of the baking dish and surround it with potato halves.
  6. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and potatoes are fork-tender.
