  • 1 cup cold beer or sparkling water
  • 2 large russet potatoes
  • 1 cup tartar sauce (store-bought or homemade)

Instructions

  1. Slice the russet potatoes into thick chips and soak them in cold water for at least 30 minutes.
  2. In a large bowl, mix together the flour and baking powder. Gradually whisk in the cold beer or sparkling water until smooth.
  3. Heat vegetable oil in a deep pot to about 350°F (175°C).
  4. Fry the soaked potato chips first until golden brown (5-6 minutes), then remove them to drain on paper towels.
  5. Dip each cod fillet into the batter, allowing excess to drip off before frying in the hot oil until golden brown (4-5 minutes), flipping halfway.
  6. Serve immediately with tartar sauce on the side.
