  • 2 medium eggplants (about 1.5 lbs)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups seasoned breadcrumbs
  • 3 cups marinara sauce (store-bought or homemade)
  • 1.5 cups fresh mozzarella cheese, shredded
  • 0.5 cup grated Parmesan cheese
  • 4 tbsp olive oil (for frying)
  • Fresh basil leaves for garnish

Instructions

  1. Prepare the eggplants by slicing them into half-inch rounds and sprinkling with salt. Let sit for 30 minutes to draw out moisture.
  2. Set up a breading station: flour in one bowl, beaten eggs in another, and seasoned breadcrumbs in a third.
  3. Dip each salted eggplant slice first into flour, then into eggs, followed by breadcrumbs. Place them on a baking sheet.
  4. Heat olive oil in a skillet over medium-high heat. Fry breaded eggplant slices until golden brown (about 3 minutes per side). Transfer to paper towels to drain excess oil.
  5. Preheat the oven to 375°F (190°C). In a baking dish, spread marinara sauce at the bottom, layer fried eggplants with mozzarella and Parmesan cheese, repeating until all ingredients are used—ending with cheese on top.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake uncovered for another 15 minutes or until bubbly and golden brown.
  7. Garnish with fresh basil leaves before serving.
