- 0.5 cup grated Parmesan cheese
- 4 tbsp olive oil (for frying)

Instructions
- Prepare the eggplants by slicing them into half-inch rounds and sprinkling with salt. Let sit for 30 minutes to draw out moisture.
- Set up a breading station: flour in one bowl, beaten eggs in another, and seasoned breadcrumbs in a third.
- Dip each salted eggplant slice first into flour, then into eggs, followed by breadcrumbs. Place them on a baking sheet.
- Heat olive oil in a skillet over medium-high heat. Fry breaded eggplant slices until golden brown (about 3 minutes per side). Transfer to paper towels to drain excess oil.
- Preheat the oven to 375°F (190°C). In a baking dish, spread marinara sauce at the bottom, layer fried eggplants with mozzarella and Parmesan cheese, repeating until all ingredients are used—ending with cheese on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake uncovered for another 15 minutes or until bubbly and golden brown.
