  • 1 cup full-fat cottage cheese
  • 1 cup diced bell peppers (any color)
  • 2 cups fresh spinach, chopped
  • 1 cup grated sharp cheddar cheese
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tsp olive oil
  • Fresh herbs (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, add olive oil and sauté the bell peppers and spinach until softened.
