  • 2 cups cremini or button mushrooms, sliced
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 tsp dried Italian herbs (oregano and basil)
  • 2 cups marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C). Gather all ingredients for easy access.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add mushrooms and spinach, cooking until wilted.
  3. In a bowl, mix ricotta cheese with salt, pepper, and dried herbs until well combined.
  4. In a baking dish, spread a thin layer of marinara sauce. Layer noodles, ricotta mixture, sautéed vegetables, mozzarella cheese, and more sauce repeatedly until all ingredients are used.
