  • 4 salmon fillets (approximately 6 oz each)
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. In a bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, salt, pepper, and olive oil until crumbly.
  3. Place salmon fillets skin-side down in the baking dish. Squeeze fresh lemon juice over fillets and season with salt and pepper.
  4. Generously apply the breadcrumb mixture onto each fillet, pressing gently to adhere.
