  • 34 boneless skinless chicken breasts
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ cup mayonnaise
  • 2 tbsp sriracha (or hot sauce)
  • Lettuce leaves for topping
  • Burger buns

Instructions

  1. Marinate the chicken in buttermilk for at least 1 hour in the refrigerator.
  2. Set up a breading station: combine flour, paprika, garlic powder, and salt in one bowl; place panko breadcrumbs in another.
  3. Dredge marinated chicken first in the flour mixture, then dip back into buttermilk, and finally coat with panko breadcrumbs.
  4. Heat oil in a skillet over medium-high heat (about 350°F/175°C). Fry chicken for about 5-6 minutes on each side until golden brown.
  5. Assemble the sandwich: spread mayonnaise mixed with sriracha on both sides of the bun, add lettuce, then top with crispy chicken.
