  • 3 cloves fresh garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (oil-packed)
  • 2 cups fresh baby spinach
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Mince the garlic and chop the sun-dried tomatoes.
  2. Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper and sear until golden brown, about 6–7 minutes per side. Remove from skillet.
  3. In the same skillet, add minced garlic and sun-dried tomatoes; sauté until fragrant (1–2 minutes).
  4. Pour in heavy cream, stirring to combine. Add Italian seasoning and simmer until thickened (3–5 minutes).
  5. Toss in spinach and stir until wilted (about 2 minutes). Add grated Parmesan cheese.
  6. Return the chicken to the skillet and simmer for an additional 5 minutes to absorb flavors.
