  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 8 oz fettuccine or penne pasta
  • 1 cup sun-dried tomatoes packed in oil, drained and chopped
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and Italian seasoning. Cook for 5-7 minutes per side until golden brown and cooked through (165°F).
  2. Remove chicken from the skillet and add garlic and sun-dried tomatoes; sauté for 1-2 minutes.
  3. Pour in heavy cream and stir in Parmesan cheese; cook until slightly thickened (3-4 minutes).
  4. Add spinach until wilted (about a minute). Cook pasta according to package instructions; drain.
  5. Combine cooked pasta with the creamy sauce in the skillet. Slice the chicken and serve on top with extra Parmesan if desired.
