Description

  • 1 cup fresh lump crab meat
  • 8 egg roll wrappers
  • 2 green onions, finely chopped
  • 3 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp Old Bay seasoning
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a bowl, combine crab meat, green onions, mayonnaise, Dijon mustard, Old Bay seasoning, salt, and pepper until just mixed.
  2. Place an egg roll wrapper in a diamond shape on a clean surface. Add 2 tablespoons of the crab mixture to the center. Fold the bottom corner over the filling, tuck in the sides, and roll tightly. Seal the top corner with water.
  3. Heat oil in a pot to 350°F (175°C). Fry egg rolls in batches until golden brown (about 3 minutes per side). Drain on paper towels.
  4. Serve warm with your choice of dipping sauce.
