Ingredients
Scale
- 16 oz cream cheese (full-fat)
- 1 cup granulated sugar
- 3 large eggs (room temperature)
- 1 tsp pure vanilla extract
- 1 cup freshly brewed strong coffee
- ¼ cup unsweetened cocoa powder
- ½ cup heavy cream
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter (melted)
Instructions
- Preheat the oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl; press into the bottom of a springform pan to form the crust.
- In another bowl, beat cream cheese until smooth. Gradually mix in sugar and vanilla, then add eggs one at a time until just combined.
- Gently stir in freshly brewed coffee until well mixed.
- Pour the filling over the crust, smoothing the top with a spatula. Bake for 55-60 minutes until set around the edges but slightly jiggly in the center.
- Turn off the oven and let cool inside for one hour before refrigerating for at least four hours or overnight.
- For ganache, heat heavy cream until simmering; whisk in cocoa powder until smooth. Pour over chilled cheesecake.
