  • 16 oz cream cheese (full-fat)
  • 1 cup granulated sugar
  • 3 large eggs (room temperature)
  • 1 tsp pure vanilla extract
  • 1 cup freshly brewed strong coffee
  • ¼ cup unsweetened cocoa powder
  • ½ cup heavy cream
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)

Instructions

  1. Preheat the oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl; press into the bottom of a springform pan to form the crust.
  2. In another bowl, beat cream cheese until smooth. Gradually mix in sugar and vanilla, then add eggs one at a time until just combined.
  3. Gently stir in freshly brewed coffee until well mixed.
  4. Pour the filling over the crust, smoothing the top with a spatula. Bake for 55-60 minutes until set around the edges but slightly jiggly in the center.
  5. Turn off the oven and let cool inside for one hour before refrigerating for at least four hours or overnight.
  6. For ganache, heat heavy cream until simmering; whisk in cocoa powder until smooth. Pour over chilled cheesecake.
