  • ½ cup unsalted butter (cold, cubed)
  • ½ cup granulated sugar (for crust)
  • 2 large eggs
  • 1 cup granulated sugar (for filling)
  • ⅓ cup fresh lemon juice (about 2 lemons)
  • 1 tbsp lemon zest
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a mixing bowl, combine flour, ½ cup granulated sugar, and cold butter. Mix until crumbly and press into the bottom of the baking pan.
  3. Bake the crust for 15 minutes or until lightly golden.
  4. While the crust cools slightly, whisk together eggs, 1 cup granulated sugar, lemon juice, and lemon zest in another bowl until combined.
  5. Pour the lemon mixture over the baked crust and return it to the oven for an additional 20-25 minutes or until set but slightly jiggly in the center.
