  • 1/4 cup brown sugar, packed
  • 2 tsp ground cinnamon (divided)
  • 2 large eggs
  • 1/2 cup unsalted butter, softened
  • 1 tsp baking soda
  • For the Cinnamon Sugar Coating: 1/4 cup granulated sugar, 2 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat together softened butter, cream cheese, granulated sugar, and brown sugar until fluffy (about 3 minutes).
  3. Add the eggs one by one, mixing well after each addition. Sift in flour, baking soda, and 1 teaspoon of cinnamon until just combined.
  4. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet.
  5. In a separate bowl, mix granulated sugar and remaining cinnamon for the coating. After baking for about 10-12 minutes, roll warm cookies in this mixture.
