  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time and mix in vanilla extract.
  4. Gradually combine wet and dry ingredients until just mixed; avoid overmixing.
  5. Chill the dough for at least 1 hour in the fridge.
  6. Scoop tablespoon-sized portions of dough, roll into balls, and coat in powdered sugar.
  7. Place on baking sheets about two inches apart and bake for 10-12 minutes or until slightly puffed but still soft in the center.
  8. Allow cooling on wire racks before enjoying.
