  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp olive oil
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 6 slices provolone cheese
  • 4 fresh hoagie rolls
  • Salt and pepper to taste
  • 1 tbsp low-sodium soy sauce

Instructions

  1. Slice the chicken breasts into thin strips and prepare your veggies by slicing the onions and bell peppers.
  2. Heat olive oil in a large skillet over medium heat. Sauté onions and bell peppers until soft and slightly caramelized (about 5 minutes).
