  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 6 oz thin rice noodles
  • 1 cup bell peppers, sliced
  • 1 cup bean sprouts
  • ½ cup roasted peanuts, chopped
  • 3 tbsp tamarind paste
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp fresh lime juice
  • ¼ cup fresh cilantro, chopped
  • Optional: chili paste for heat

Instructions

  1. Prepare all ingredients by chopping vegetables into bite-sized pieces.
  2. Heat oil in a large skillet over medium-high heat. Add seasoned chicken breasts and cook until golden brown, about 5-7 minutes. Remove and set aside.
  3. Stir-fry bell peppers for about 3-4 minutes until softened.
  4. Boil water in another pot; add soaked rice noodles and cook for 3-5 minutes until al dente. Drain well.
  5. In a bowl, mix tamarind paste, soy sauce, brown sugar, lime juice, and chili paste if using.
  6. Return the chicken to the skillet along with drained noodles and sauce mixture; stir well to combine.
  7. Serve hot topped with chopped peanuts and cilantro.
