- 1 cup bell peppers, sliced
- 1 cup bean sprouts
- ½ cup roasted peanuts, chopped
- 3 tbsp tamarind paste
- 3 tbsp low-sodium soy sauce
- 2 tbsp brown sugar
- 2 tbsp fresh lime juice
- ¼ cup fresh cilantro, chopped
- Optional: chili paste for heat
Instructions
- Prepare all ingredients by chopping vegetables into bite-sized pieces.
- Heat oil in a large skillet over medium-high heat. Add seasoned chicken breasts and cook until golden brown, about 5-7 minutes. Remove and set aside.
- Stir-fry bell peppers for about 3-4 minutes until softened.
- Boil water in another pot; add soaked rice noodles and cook for 3-5 minutes until al dente. Drain well.
- In a bowl, mix tamarind paste, soy sauce, brown sugar, lime juice, and chili paste if using.
- Return the chicken to the skillet along with drained noodles and sauce mixture; stir well to combine.
