  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1/2 cup all-purpose flour
  • 3 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 3 cloves fresh garlic, minced
  • 8 oz cremini or button mushrooms, sliced
  • 1 cup dry Marsala wine
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. 1. Prepare your ingredients: mince garlic, slice mushrooms, and season chicken with salt and pepper.
  2. 2. In a large skillet over medium-high heat, heat olive oil and butter. Sauté chicken breasts until golden brown on both sides (about 5 minutes per side). Remove from skillet.
  3. 3. In the same skillet, add more butter if needed and sauté sliced mushrooms with minced garlic until softened (about 3 minutes).
  4. 4. Pour in the Marsala wine and let it reduce for about 2 minutes while scraping up any browned bits from the pan.
  5. 5. Add chicken broth and return the chicken to the skillet; let it simmer gently.
  6. 6. Stir in heavy cream and cook for an additional 5 minutes until the chicken is cooked through and coated in sauce.
