- 3 cups day-old rice (cold)
- 4 green onions (finely chopped)
- 1 cup carrots (diced)
- 1 cup frozen peas
- 3 cloves garlic (minced)
- 4 tbsp low-sodium soy sauce
- 2 tbsp sesame oil
- Salt and pepper (to taste)
Instructions
- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the diced chicken and cook until golden brown and fully cooked through, about 5-7 minutes. Remove from the skillet.
- In the same skillet, add minced garlic and diced carrots; sauté until fragrant, about 1 minute. Stir in frozen peas and green onions.
- Gently fold in the day-old rice, breaking up clumps as needed. Drizzle soy sauce over the mixture while stirring continuously until each grain is coated.
- Pour in sesame oil and adjust salt and pepper to taste. Stir until everything is well combined and heated through, approximately 3-5 minutes.
- Serve hot, garnished with extra green onions if desired.
