  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz elbow macaroni (or preferred pasta shape)
  • 2 cups sharp cheddar cheese, shredded
  • 2 cups whole milk
  • 4 tbsp unsalted butter
  • ¼ cup all-purpose flour
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil a large pot of water and cook the macaroni according to package instructions until al dente (7-9 minutes). Drain and set aside.
  3. In a skillet over medium heat, melt 2 tablespoons of butter. Add diced chicken seasoned with salt and pepper; cook until golden brown (5-7 minutes).
  4. In another pot, melt the remaining butter over medium-low heat. Stir in flour to create a roux and cook for about 2 minutes.
  5. Gradually whisk in milk, stirring until thickened (about 5 minutes). Mix in cheddar cheese until melted and creamy.
  6. Combine cooked macaroni with the cheese sauce and sautéed chicken; transfer to a greased baking dish.
  7. Top with additional cheddar cheese and bake for 20-25 minutes until bubbly and golden.
