  • 4 medium bell peppers (red, yellow, or green)
  • 1 lb ground beef or turkey
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded mozzarella cheese
  • 1 cup tomato sauce
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Slice the tops off the bell peppers and remove seeds to create bowls.
  3. In a skillet over medium heat, cook ground meat until browned. Stir in cooked rice, tomato sauce, garlic powder, Italian seasoning, salt, and pepper until well combined.
  4. Generously stuff each pepper with the filling mixture and top with mozzarella cheese.
  5. Place stuffed peppers upright in the baking dish and cover with foil. Bake for 30 minutes; remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
  6. Let cool briefly before serving.
