  • 4 large eggs
  • 2 cups shredded carrots (about 4 medium carrots)
  • 8 oz cream cheese (for frosting)
  • 1/2 cup unsalted butter (for frosting)
  • 4 cups powdered sugar (for frosting)
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two round cake pans with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix sugar and vegetable oil until combined. Add eggs one at a time, then stir in shredded carrots.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Pour batter evenly into prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  6. Allow cakes to cool in pans for about ten minutes before transferring to wire racks to cool completely.
  7. For frosting, beat cream cheese and butter until smooth; then add powdered sugar and vanilla extract until well blended.
  8. Frost between layers and on top of the cooled cake.
