  • 1 tsp vanilla extract
  • 1 cup grated carrots

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, granulated sugar, brown sugar, cinnamon, baking soda, and salt.
  3. In a large bowl, cream the softened butter until smooth; gradually add sugars and mix until fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry mixture into the wet mixture and stir gently until just combined.
  6. Fold in grated carrots and optional nuts.
  7. Drop dough onto prepared baking sheets about two inches apart.
