  • 1/2 cup unsalted butter (browned)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (light or dark)
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 1/2 cups all-purpose flour
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a saucepan over medium heat, melt and brown the unsalted butter until golden and nutty. Let cool slightly.
  3. Mash the ripe bananas in a mixing bowl until mostly smooth, leaving some lumps.
  4. Mix in the browned butter, both sugars, eggs, and vanilla until well combined.
  5. In another bowl, whisk together flour, baking soda, and salt.
  6. Gradually fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
  7. Pour batter into the prepared loaf pan and bake for about 60 minutes or until a toothpick comes out clean from the center.
