  • 4 salmon fillets (6 oz each)
  • 1/2 cup bourbon
  • 2 ripe peaches, sliced
  • 1/4 cup brown sugar
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp olive oil
  • 2 tbsp chopped fresh cilantro or parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together bourbon, soy sauce, brown sugar, and olive oil until smooth.
  3. Place salmon fillets in a shallow dish and pour the marinade over them. Let marinate for at least 30 minutes.
