Description

Baked Pineapple Salmon is a tropical delight that combines the tender, flaky texture of salmon with a sweet and tangy pineapple glaze. Each bite transports you to sun-soaked beaches, making it perfect for both casual weeknight dinners and special occasions.


Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1 cup canned pineapple rings (packed in juice)
  • 2 tbsp brown sugar
  • 2 tbsp soy sauce
  • 1 tsp garlic powder
  • 2 tbsp lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish with nonstick spray.
  2. Drain the canned pineapple rings and arrange them in the bottom of the baking dish.
  3. In a bowl, mix brown sugar, soy sauce, garlic powder, and lemon juice until well combined.
  4. Place salmon fillets on top of the pineapple rings and generously brush with the glaze.
  5. Bake for 15-20 minutes or until the salmon flakes easily with a fork.
  6. Serve with additional glaze drizzled on top and garnish with parsley.
