Description

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 12 oz fettuccine pasta
  • 1 cup heavy cream
  • 3 cloves fresh garlic, minced
  • 1 cup grated fresh Parmesan cheese
  • 4 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper. In a skillet over medium heat, melt 2 tbsp butter and brown the chicken for about 5-7 minutes on each side until golden.
  3. In another pan, melt the remaining butter over low heat. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Slowly add heavy cream while stirring continuously. Gradually mix in Parmesan cheese until melted and smooth; season with salt and pepper.
  5. Cook fettuccine according to package instructions until al dente. Drain and combine with the Alfredo sauce in a large bowl.
  6. Dice browned chicken into bite-sized pieces and fold into the pasta mixture. Spread evenly in the baking dish.
  7. Optionally sprinkle extra Parmesan on top and bake uncovered for about 20-25 minutes until bubbly and golden brown.
