- 1/2 cup vegetable oil
- 1 cup water (as per cake mix instructions)
- 16 oz cream cheese, softened
- 1 cup sour cream
- 1 cup granulated sugar
- 2 tsp vanilla extract
- 1 lb fresh strawberries, halved
- 1 cup heavy whipping cream
Instructions
- Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
- In a large bowl, combine red velvet cake mix, eggs, vegetable oil, and water. Mix until smooth.
- Divide batter between prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Let cool completely.
- For the cheesecake filling, beat softened cream cheese in a bowl until smooth. Add sugar, sour cream, and vanilla extract; mix until creamy.
- Pour cheesecake filling into a greased 9-inch springform pan and bake at 325°F (160°C) for 45-55 minutes until slightly jiggly in the center. Cool completely then chill in the refrigerator.
- Once cooled, slice each red velvet layer horizontally if desired. Assemble by layering red velvet cake, whipped cream, cheesecake filling, and fresh strawberries.
