Description

Red Velvet Strawberry Cheesecake is a show-stopping dessert that combines the rich flavors of red velvet cake with a creamy cheesecake layer, all beautifully topped with fresh strawberries. This decadent treat is perfect for celebrations or as a sweet indulgence any day of the week.

  • 1 box (15.25 oz) red velvet cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water (as per cake mix instructions)
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 1 lb fresh strawberries, halved
  • 1 cup heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a large bowl, combine red velvet cake mix, eggs, vegetable oil, and water. Mix until smooth.
  3. Divide batter between prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Let cool completely.
  4. For the cheesecake filling, beat softened cream cheese in a bowl until smooth. Add sugar, sour cream, and vanilla extract; mix until creamy.
  5. Pour cheesecake filling into a greased 9-inch springform pan and bake at 325°F (160°C) for 45-55 minutes until slightly jiggly in the center. Cool completely then chill in the refrigerator.
  6. Once cooled, slice each red velvet layer horizontally if desired. Assemble by layering red velvet cake, whipped cream, cheesecake filling, and fresh strawberries.
  7. Serve chilled.
