Ingredients

  • Crushed Graham Crackers
  • Unsalted Butter
  • Granulated Sugar
  • Cream Cheese
  • Sour Cream
  • Fresh Lemons (juice and zest)
  • Fresh Raspberries
  • Eggs
  • Vanilla Extract
  • Salt

Instructions

  1. Preheat oven to 325°F (160°C). In a bowl, mix crushed graham crackers, melted butter, and sugar until combined.
  2. Press the mixture into the bottom of a springform pan. Bake for 10 minutes until lightly golden.
  3. Beat cream cheese until smooth. Gradually add sugar and mix until fluffy, about 3 minutes.
  4. Add sour cream, then eggs one at a time, mixing just until combined. Fold in lemon zest and juice.
  5. Mash fresh raspberries with sugar in another bowl. Swirl half into the cheesecake batter before pouring it over the crust.
  6. Bake for 55-60 minutes until edges set but center remains jiggly. Cool before refrigerating for at least four hours or overnight.
