  • 1 ½ cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • ½ cup granulated sugar (divided)
  • 16 oz Philadelphia cream cheese, softened
  • 1 cup sour cream
  • 2 tsp pure vanilla extract
  • 2 cups fresh strawberries, sliced
  • Optional: powdered sugar for topping

Instructions

  1. Preheat oven to 325°F (160°C) and lightly grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press into the bottom of the pan.
  3. Bake crust for 10 minutes until set and golden.
  4. Beat softened cream cheese in a mixing bowl until smooth. Add sour cream and vanilla; mix well.
  5. Gradually incorporate remaining sugar until smooth.
  6. Pour filling over the crust and bake for 60-70 minutes until slightly jiggly in the center. Cool completely before refrigerating.
