Description

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar (divided)
  • ½ cup unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries (pureed)
  • 2 tbsp lemon juice
  • 3 large eggs

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs with ⅓ cup sugar and melted butter. Press firmly into the bottom of a springform pan and bake for 10 minutes.
  3. Beat softened cream cheese in a large bowl until smooth. Gradually add remaining sugar, then blend in sour cream and vanilla until creamy.
  4. Mix in lemon juice and eggs one at a time until just combined.
  5. Puree fresh strawberries; reserve some for swirling.
  6. Pour half of the cheesecake mixture into the crust, drizzle with strawberry puree, layer on the remaining mixture, and finish with more puree.
  7. Bake for 50-60 minutes until edges are set but center jiggles slightly. Cool completely before refrigerating for at least four hours.
