- 2 tbsp lemon juice
- 3 large eggs
Instructions
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs with ⅓ cup sugar and melted butter. Press firmly into the bottom of a springform pan and bake for 10 minutes.
- Beat softened cream cheese in a large bowl until smooth. Gradually add remaining sugar, then blend in sour cream and vanilla until creamy.
- Mix in lemon juice and eggs one at a time until just combined.
- Puree fresh strawberries; reserve some for swirling.
- Pour half of the cheesecake mixture into the crust, drizzle with strawberry puree, layer on the remaining mixture, and finish with more puree.
- Bake for 50-60 minutes until edges are set but center jiggles slightly. Cool completely before refrigerating for at least four hours.
