Ingredients

  • 8 oz fettuccine or linguine
  • 1 lb shrimp, deveined (fresh or frozen)
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • Juice of 1/2 lemon
  • Salt and pepper to taste
  • 2 tbsp butter

Instructions

  1. Boil salted water in a large pot. Add pasta and cook until al dente (8-10 minutes). Reserve some pasta water before draining.
  2. In a skillet, melt butter over medium heat. Add minced garlic and cook for 30 seconds. Add shrimp and cook until pink and opaque (3-4 minutes per side).
  3. Reduce heat and stir in heavy cream. Simmer for about 5 minutes until thickened. Gradually add Parmesan cheese.
  4. Stir in cooked pasta, lemon juice, and parsley until well coated. Adjust consistency with reserved pasta water as needed.
  5. Taste and adjust seasoning with salt and pepper before serving hot.
