  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter, melted
  • 1 ½ cups granulated sugar (½ cup for crust + 1 cup for filling)
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 2 cups fresh mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine crushed graham crackers, melted butter, and ½ cup sugar. Press mixture into the bottom of a greased springform pan.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add in the remaining 1 cup sugar while mixing until well combined. Fold in sour cream and vanilla extract until creamy.
  3. Pour the filling over the prepared crust and smooth the top. Bake for about 45 minutes or until set but slightly jiggly in the center.
  4. Cool at room temperature for an hour before refrigerating for at least four hours or overnight.
  5. Top with washed fresh berries before serving.
