  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 1 lb fresh strawberries, hulled and sliced

  • 3 large eggs, at room temperature

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9-inch springform pan.
  2. Bake crust for about 10 minutes until lightly golden.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add sour cream and vanilla; mix well.
  4. Incorporate eggs one at a time without overmixing.
  5. Pour filling over cooled crust and smooth the top. Bake for 50-60 minutes until the center is slightly jiggly.
  6. Cool completely before refrigerating for at least four hours or overnight.
