  • 1 medium onion, diced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté for about 5 minutes until softened.
  2. Stir in garlic, cumin, and smoked paprika; cook for another minute until fragrant.
  3. Add rinsed lentils and vegetable broth; bring to a boil. Reduce heat and simmer covered for 30–35 minutes until lentils are tender.
