  • 1 lb lean ground beef
  • 1 cup orzo pasta
  • 1 cup bell peppers (diced, mix of red and yellow)
  • 1 medium onion (chopped)
  • 3 garlic cloves (minced)
  • 14 oz canned crushed tomatoes
  • 1/2 cup crumbled feta cheese
  • 2 tsp dried oregano
  • 2 tbsp extra virgin olive oil
  • 2 cups chicken broth

Instructions

  1. 1. Prepare your ingredients: Chop bell peppers, onion, and garlic.
  2. 2. Heat olive oil in a large skillet over medium heat. Sauté onions until translucent (3–4 minutes), then add garlic for another minute.
  3. 3. Increase heat to medium-high; add ground beef and cook until browned (6–8 minutes). Drain excess fat if needed.
  4. 4. Stir in bell peppers and oregano; season with salt and pepper. Cook for about 3–5 minutes until veggies soften.
  5. 5. Pour in crushed tomatoes and chicken broth; bring to a boil. Add orzo, stir well, reduce heat to low, cover, and simmer for 10–12 minutes until orzo is tender.
  6. 6. Remove from heat and sprinkle feta on top. Let sit covered for 5 minutes before serving.
