- 1 cup orzo pasta
- 1 cup bell peppers (diced, mix of red and yellow)
- 1 medium onion (chopped)
- 3 garlic cloves (minced)
- 14 oz canned crushed tomatoes
- 1/2 cup crumbled feta cheese
- 2 tsp dried oregano
- 2 tbsp extra virgin olive oil
- 2 cups chicken broth
Instructions
- 1. Prepare your ingredients: Chop bell peppers, onion, and garlic.
- 2. Heat olive oil in a large skillet over medium heat. Sauté onions until translucent (3–4 minutes), then add garlic for another minute.
- 3. Increase heat to medium-high; add ground beef and cook until browned (6–8 minutes). Drain excess fat if needed.
- 4. Stir in bell peppers and oregano; season with salt and pepper. Cook for about 3–5 minutes until veggies soften.
- 5. Pour in crushed tomatoes and chicken broth; bring to a boil. Add orzo, stir well, reduce heat to low, cover, and simmer for 10–12 minutes until orzo is tender.
- 6. Remove from heat and sprinkle feta on top. Let sit covered for 5 minutes before serving.
