  • 2 lbs ripe tomatoes, chopped
  • 1 medium yellow onion, chopped
  • 4 cloves garlic
  • 2 tbsp extra virgin olive oil
  • 2 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh basil leaves (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Chop tomatoes and onion into chunks.
  2. Spread tomatoes and onion on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes until slightly charred.
  3. Add whole garlic cloves to the baking sheet during the last 10 minutes of roasting.
  4. Transfer roasted vegetables to a blender, add vegetable broth gradually until desired consistency is reached, and blend until smooth.
  5. Pour the mixture back into the pot over low heat, stir in heavy cream, and adjust seasoning as needed.
  6. Ladle into bowls, garnish with basil if desired, and serve warm.
