- 2 lbs ripe tomatoes, chopped
- 1 medium yellow onion, chopped
- 4 cloves garlic

- 2 cups low-sodium vegetable broth

- Salt and pepper to taste
- Fresh basil leaves (optional)
Instructions
- Preheat oven to 400°F (200°C). Chop tomatoes and onion into chunks.
- Spread tomatoes and onion on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes until slightly charred.
- Add whole garlic cloves to the baking sheet during the last 10 minutes of roasting.
