Ingredients
- 1 cup dried fava beans
- 3 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- Rinse the fava beans under cold water and soak them in a bowl of water overnight.
- Drain and rinse the beans again, then place them in a pot covered with fresh water. Simmer over medium heat for about 1 hour until tender.
- Reserve some cooking liquid, then blend half of the cooked beans with garlic and cumin until smooth. Add reserved liquid for desired texture.
- Return blended beans to the pot along with whole beans. Stir in olive oil and lemon juice, adjusting seasoning as needed.
- Serve hot, drizzling with additional olive oil and garnishing with fresh herbs if desired.
