Ingredients

  • 1 cup dried fava beans
  • 3 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Rinse the fava beans under cold water and soak them in a bowl of water overnight.
  2. Drain and rinse the beans again, then place them in a pot covered with fresh water. Simmer over medium heat for about 1 hour until tender.
  3. Reserve some cooking liquid, then blend half of the cooked beans with garlic and cumin until smooth. Add reserved liquid for desired texture.
  4. Return blended beans to the pot along with whole beans. Stir in olive oil and lemon juice, adjusting seasoning as needed.
  5. Serve hot, drizzling with additional olive oil and garnishing with fresh herbs if desired.
