  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 2 cups cherry tomatoes, diced
  • 1 cup fresh basil leaves, chopped
  • 12 oz penne pasta (or pasta of choice)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then add to the skillet. Cook for approximately 6-7 minutes per side until golden brown and fully cooked. Remove and slice.
  2. In a separate pot, bring salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and reserve some pasta water.
  3. In a bowl, mix diced cherry tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper to create the bruschetta topping.
  4. Combine sliced chicken with the cooked pasta and bruschetta mixture. If needed, add reserved pasta water to achieve desired creaminess.
  5. Serve warm with optional garnishes like extra basil or grated Parmesan.
