- 2 lbs beef roast (ribeye or chuck)
- 4 hoagie rolls
- 3 cups low-sodium beef broth
- 1 large onion (sliced)
- 2 tbsp Worcestershire sauce
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Season the beef roast with salt and pepper. Sear in olive oil over medium-high heat until browned (3-5 minutes per side).
- Transfer the roast to a slow cooker, add beef broth and Worcestershire sauce, cover, and cook on low for about 8 hours until tender.
- Sauté sliced onions in the same skillet until golden brown (about 10 minutes).
- Preheat oven to broil. Cut hoagie rolls in half and toast under the broiler until golden (2-3 minutes).
- Shred the cooked beef and fill each toasted roll with meat and sautéed onions.
- Serve sandwiches hot alongside small bowls of warm broth for dipping.
