Description

  • 1 cup quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1 cup bell peppers (any color), diced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water in a fine mesh strainer. In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for about 15 minutes until all water is absorbed. Let it sit covered for another 5 minutes before fluffing with a fork.
  2. While the quinoa cooks, chop the cherry tomatoes, cucumber, bell peppers, and red onion.
  3. In a large mixing bowl, combine the cooked quinoa with chopped vegetables and parsley.
  4. Drizzle lemon juice and olive oil over the salad mixture. Season with salt and pepper to taste. Toss gently to combine.
  5. For enhanced flavor, chill in the fridge for about 30 minutes before serving.
