Instructions
- Rinse the quinoa under cold water in a fine mesh strainer. In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for about 15 minutes until all water is absorbed. Let it sit covered for another 5 minutes before fluffing with a fork.
- While the quinoa cooks, chop the cherry tomatoes, cucumber, bell peppers, and red onion.
- In a large mixing bowl, combine the cooked quinoa with chopped vegetables and parsley.
- Drizzle lemon juice and olive oil over the salad mixture. Season with salt and pepper to taste. Toss gently to combine.
