Ingredients

  • Bone-in chicken thighs
  • Onions
  • Garlic
  • Fresh ginger
  • Cumin
  • Coriander
  • Cinnamon
  • Turmeric
  • Dried apricots
  • Chickpeas
  • Chicken broth
  • Fresh cilantro or parsley
  • Lemon juice

Instructions

  1. Chop onions and garlic; set aside.
  2. In a large pot over medium heat, sauté onions and garlic in olive oil until translucent (about 5 minutes).
  3. Add grated ginger, cumin, coriander, cinnamon, and turmeric; cook for another minute.
  4. Sear chicken thighs skin-side down for 5-7 minutes until golden brown.
  5. Stir in dried apricots, chickpeas, and chicken broth; bring to a simmer.
  6. Cover partially and cook on low heat for 30-40 minutes until chicken is tender.
