  • 2 cups basmati rice, rinsed
  • 1.5 pounds chicken thighs, skinless and boneless
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 tablespoon ginger paste
  • 1 cup plain yogurt
  • 3 tablespoons biryani masala
  • 10 strands saffron soaked in ¼ cup warm milk
  • ½ cup cilantro leaves, chopped
  • ½ cup mint leaves, chopped
  • Salt to taste
  • 3 tablespoons oil or ghee

Instructions

  1. Soak basmati rice in water for 30 minutes; drain.
  2. In a bowl, marinate chicken with yogurt, garlic, ginger paste, biryani masala, and salt; let sit for at least one hour.
  3. Heat oil or ghee in a pot; sauté onions until golden brown (reserve half for garnishing).
  4. Add marinated chicken to the pot and cook until browned (about 10 minutes).
  5. Layer soaked rice over the chicken. Pour saffron milk on top and add enough water to cover the rice.
  6. Cover with a lid and cook on low heat for 30 minutes. Let it rest for an additional 10 minutes before fluffing.
