- 2 cups basmati rice, rinsed
- 1.5 pounds chicken thighs, skinless and boneless
- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 1 tablespoon ginger paste
- 1 cup plain yogurt
- 3 tablespoons biryani masala
- 10 strands saffron soaked in ¼ cup warm milk
- ½ cup cilantro leaves, chopped
- ½ cup mint leaves, chopped
- Salt to taste
- 3 tablespoons oil or ghee
Instructions
- Soak basmati rice in water for 30 minutes; drain.
- In a bowl, marinate chicken with yogurt, garlic, ginger paste, biryani masala, and salt; let sit for at least one hour.
- Heat oil or ghee in a pot; sauté onions until golden brown (reserve half for garnishing).
- Add marinated chicken to the pot and cook until browned (about 10 minutes).
- Layer soaked rice over the chicken. Pour saffron milk on top and add enough water to cover the rice.
- Cover with a lid and cook on low heat for 30 minutes. Let it rest for an additional 10 minutes before fluffing.
